Baguette crostini appetizers with roasted red pepper & herbs
Whipped feta crostini with hot honey is a bite-sized explosion of flavor that’s both elegant and bold. Ingredients:
- 1 cup – Feta Cheese (prefer block-in-brine, broken in chunks)
- 3⁄4 cup – Greek Yogurt
- 1⁄2 cup – Roasted Red Peppers (Small Diced)
- 1 tablespoon – Chopped Parsley
- 1 – Demi/Mini Baguette
- 1⁄4 cup – Little BEEst Roasted Pineapple Hot Honey Sauce
- Canola Oil
- Salt & Pepper to taste
Instructions:
- Preheat oven to 375 °F.
- Slice baguette into 1⁄4” slices. Toss in a bowl with a drizzle of canola oil, salt & pepper. Transfer to a baking sheet.
- Toast baguette slices for 6-10 minutes, until crispy & golden brown.
- In a food processor, add feta cheese & yogurt. Blend until smooth.
- Spread a heaping teaspoon of whipped feta over the crostini.
- Top each piece with roasted red peppers, drizzle hot honey sauce over the top.
- Garnish the top with chopped herbs, transfer to a platter & serve.
